HAPPY ASS RANCH

Monday, 4/21. Hooray!! We arrived at Mike and Pamm's HAPPY ASS RANCH (HAR) last night. From Abilene, the HAR is 20 winding miles from the interstate and their beautiful ranch home is secluded within 160 acres of sprawling property. In addition to their ranch animals (shown in previous posting), there are deer, wild turkeys, big wild pigs, lizards, snakes and other varmits you have to be on the lookout for.
Bright and early Monday a.m., Tim eagerly put on work gloves and helped Mike weld together a garden fence while comparing tools, engines and equipment. Whirling through an outback setting in a Trail Wagon with one dog and the rest following, Pamm gave a tour and we stopped to feed the cows and cats and collect hen eggs.

For dinner, we were transported to a "hideaway" in the brush. Awesome grilled sausage sandwiches, fresh fruit and grilled cob corn w/butter, cilantro and a touch of barbeque sauce. As the sun went down, Tim and Mike--former LE and NA buddies-- told tales from the trenches. It is our wedding anniversary and we are with special friends--a night to remember!

Tuesday, 4/22. Pamm and I completed a rescue mission and moved two kittens and their momma from the hot tack barn to a more comfortable area inside the house.
Tim needed a rest after breakfast.

Mike fired up the smoker to begin the 7-hour rib cooking process.

Appropriate for a true Texas barbeque, we donned our boots and hats. Mike's melt-in-your-mouth smoked ribs and Pamm's tasty cowboy beans were absolutely grand!

We loved our visit to the HAR and love our HAR shirts and hats. Mike and Pamm have a special ranch paradise and we thank them for their gracious hospitality. We will enjoy the extra ribs as we journey "into the wild" through New Mexico.
